SWMBO/AKA GoldfishGal brought home some lords hot pork sausage yesterday and I am looking for recommendations on cooking it...low and slow or hot and direct? I do want to get some smoky flavor on it. We tasted this at last years eggtoberfest and it was the bomb...

either way should be good i have done sausage both ways i do prefer low and slow tho with a rub and some apple woodLarge Big Green Egg , XL Big Green Egg . BBQ Guru, Weber Kettle, Weber Q grill for road trips.

The only reason I bring it up is that I read somewhere that lo and slo keeps it in the "danger" zone for too long and could create a problem
