maybe build a pizza on a smashed flat chicken breast. there is no substitute for bread, after a few months on low carbs i actually made an english muffin one night fried in butter with zatar seasoning, i have no memories about it, just found the evidence in the morning

Well the good news is I went back to my Doctor last Friday and he checked my A1C. Even though it had only been 6 weeks (A1C checks your average blood sugar over 3 months), Mine had dropped from 8.1 to 5.4. Doc said it was exceptional. I don't go back till August, but he said if I keep it up, he'll take me off Metformin and declare me free of diabetes. So next time I feel like having a pizza, I'll walk a bit extra in the morning, take a long bike ride in the afternoon and then induldge in regular dough pizza.

I gotta get into this low carb stuff.I know Mickey would terribly disagree, but I could lose a few pounds to be back to my Army weight.I don't think I can handle the whole wheat crap though. Low carb and exercise is how I keep my blood glucose under control. Still have to take my meds and insulin. My A1c dropped from 11.5 to 5.7 after 4 months of going grain free and low carb and exercise. Bread, cookies, pie and pizza aren't worth it IMHO.I tried the chick pea flour and it worked well as a flat bread on the BGE. I use almond, coconut, and nut flours in place of wheat. Just started experimenting with chick pea flour. You can forget about processed foods. Griffin, Not sure if your diet allows but I recommend eggplant pizza. Yeah, it's not exactly like real pizza, but damn good. Same with eggplant lasagna. I know Paleo is different, but that's what I used to make all the time when I was low carbing.
