I won first place brisket and third place ribs. My friend Jon won second place brisket. He got his egg at salado and it was his first brisket ever. He's never even seen one made.
There was quite a bit of grumbling about the eggs and my maverick and thermapen. The guys with $10k rigs didn't like my full night of sleep either.
I used a 14.6 lb select brisket. Rubbed with bills season all. Nothing but rub and smoke.

You are the brisket Coach :ar! Which is better: dry cook or your wet cook?Salado TX & 30A FL: Egg Family: 3 Large and a very well used Mini, added a Mini Max when they came out (I'm good for now).

No turbo. I cooked at 280 grid.
I'm not sure about with the grain or not. I never figured that out but it doesn't seem to matter. Maybe I've been doing it right.
The dry is better if done right. The wet method is more forgiving. All things being equal, I pick traditional style.Be careful, man! I've got a beverage here. -

Congratulations. Over the years, lots of Egging competitors have laughed because they sleep the night thru. But if the other competitors (aka, loosers) don't use a fast read thermometer, why are they even bothering? -
