Chicken Bombs (pictures)
Thanks to @nashbama for the inspiration... these were a huge hit last night.
I stuffed the jalapeños with a mixture of goat cheese and jack cheese:
Wrapped it all up with bacon:
Slathered them with Sticky Fingers Carolina Classic.
And cooked raised direct for 45 minutes at about 350F.
They rocked!

Looks awesome. Is "raised direct" when the grid is at gasket level but without the platesetter? Is there an easy way to do that without buying an additional accessory?

Did you use flattened breasts or boneless thighs? Thighs would probably stay moister or does the bacon do that with breasts? They look delicious, by the way.
I just got a medium for Christmas with lots of eggsesories to go with my smoker and Charbroil Infrared. These two have been redundant since!! Done all sorts from pizzas to pork shoulder. Love it.

@Kristi - any advice on substitute for goat cheese? I love it - but the Queen is not a fan - too tangy? But I love the consistency and want to use it. I know you cook with it all the time, would love any recommendations. Thanks!

milesbrown4 -- softened cream cheese works really well. It doesn't have much pizazz (imo) but you can jazz it up with shredded cheese and various seasonings. Sometimes I mix goat cheese & cream cheese in my poppers.
