Jalapeño and cheddar meatloaf
This was last nights dinner. First attempt at meatloaf. Could of had a bit more salt to the mix but excellent overall. Little smoke ring. Didn't add any wood just from the lump.
Several more variations of meatloaf to try. ML is one if my faves.

Just noticed in the upper left corner of the sliced meatloaf pic, my pooch is looking for a snack. At least he is trained not to enter the kitchen and stay on the rug.

Here is a better one for ya. Taken yesterday. By the fire pit it isnt that out of place for volume of snow. This is a 2 tier deck and it drops 3 steps to the bottom level. There it is about 2 ft. deep. I used a dehydrated fire roasted jalapeno and just let it sit in the beaten eggs for 10 minutes to rehydrate, so as not to lose the jalapeno flavor.
