My first 3 days with my big green egg

I'm cooking my fourth meal on my new xlbge in as many days. That means I've cooked on bge every day I've had it so far. Lemme tell ya.....I gotta lot to learn! [p]First night, pizzas, thought I'd start easy. The result of heating my stone to 450 was really nice crisp crust with very nicely cooked toppings. That was the first pie, the second the bottom burned and the top was "rare". Live and learn.[p]Second night, splaycocked (sp?) chickens. I figured if I'm makin one i might as well make two. Cooked them both at the same time, one very nice the second crispy and...well, I'll be honest, kinda dry. I was perplexed and still haven't figured out what I did.[p]Last night, burgers, tasty but too overcooked for me. [p]Tonight I'm havin a beer and trying to get my bge up to 700 to cook my first steak. We'll see how it goes.[p]Frank

    I don't have an XLBGE, but I do have a large and a small, and they both have a hot spot in the back right(say around 2:00 on a clock dial. When I do spatchcocked chix, I tend to rotate the grid every 15 minutes or so. Figger every time I open a beer. I will flip them after about 45 minutes and cook until done. You will get to know your egg, and maybe the XL doesn't have a hot spot, but maybe your lump was just hotter under the one bird. Anyway, keep on cookin and enjoying that big ole egg! Hope this helps.

    I think you are the closest BGE owner to me. I'm in Westport, CT.
    Cooking on the egg is very differant then on a gas grill but once you get it it's the best! If I can help you I will try. Where did you get yours?

  • jackbythesea,[p]I got mine at Charles Department Store in Katonah. I'm really having a difficult time with temperature control.
  • Crab leg,[p]I never read anywhere about hot spots....now see, thats something that would have helped me. My steak came out okay. I was happy eating it! Thanks for the tip on turning and moving things, i never saw that before.

    Can't say that every egg has this happen, but I know that I am not alone in having this happen. I donot consider it a problem, just something to keep in mind. Glad the steak turned out good. Keep the smoke rising.
