Guava Wood Chunks - What to cook?

I just ordered some Guava Wood Chunks from Guave Wood Farms (see link below). I am hoping that they will arrive before next weeks 3 day weekend. What do you suggest that I make for my first cook with the Guava chunks? Also do you use alot are only a chunk or two? Thanks for any help and while I am rambling on has anyone seen Episode 3 yet? Forget Mapp gas I'd like to try one of those lighsabers to get the lump going.

I have used it for chicken and in combo with Hickory for pulled pork. [p]Anything you would use apple or cherry for would be good.[p]As for how much it depends on how much smoke you like.

How about Kalua pig or chicken? Grilled Mahi mahi? Grilled shark? Wait a minute, forget the shark-not greasy enough.[p]I can see it now....New York meets Hawaii. Hulla girls, pineapples and guava smoke against the Manhattan skyline.

I ordered mine by email on a Thursday and they were at my door the following Monday! I think you'll make it for the weekend.[p]Used it for the first time two nights ago. Cooked 5 # of country style pork ribs, bone in, rubbed with Dizzy Pig Red Eye Express. Tossed in one small chunk of Guava Wood at the start. Kept dome temp 225 - 250 for a couple of hours. Didn't take an internal before I pulled them off.[p]We loved it! Moist with a light smoky flavor. What ever you cook, it will be great, but my vote goes to pork. Good luck!

Retired RailRoader,[p]I did that Lechon Asada (Cuban Pork) last weekend with guava and oak. I tell you what...That was some great stuff. I finished it off today and fed 3 other people at work. I think they love me!!! LOL[p]

I spelled it incorrectly when I posted to you. As for the recipe I will E-mail that recipe. It is actually screen shots from a post that was done on this site. I think that should be in the archives too. [p]I tell you what...best stuff I have ever made...EVER. Suits my taste to a "t"[p]Joe
