Apricot and Cranberry Pork Loin.




1 and 1/2 cups dried apricots chopped
1/2 cups dried cranberries
3 Tbsp Honey
1 and 1/2 Tbsp ground ginger

4 LB pork lion
Filet the lion out about 1 inch thick.
fill with Apricots, cranberries, honey, ginger and about half the dry ingredients from below.

Roll up Lion and tie it.

Combine Dry
2/3 Cup bread crumbs fine
2 Tbsp Dry Parsley
1 Tbsp Flour
1 Tbsp Finely grated Parmesan (Omitted child can not have milk)
1/2 tsp Sugar
1/4 tsp salt
1/4 tsp Pepper
1/2 tsp Oregano
1/4 tsp onion salt
1/4 tsp garlic salt
after mixed  add 
2 Tbsp shortening

rub lion with EVOO 
Top with rest of dry ingredients.

Cook indirect 375 basting with apple juice or 10 or 20 minutes. 
At 85 int I put in carrots, red potatoes and yellow onions. I just made enough veggies to make it look good.
