If you roasted them and removed the skin could you refrigerate to use later?

Only for a bit. Try freezing them. I do this with Hatch chile peppers that I get late summer. I cook some to eat right away, blister and freeze some, and the rest I make into hot sauce.One easy way to peel is to blister then stick them in a covered vessel. The steam from the peppers helps the skin release.
