I can never seem to get a poached egg to turn out.  Below is a link to a very helpful video on how to make a good poached egg.

    I was in Urban Grub in Nashville for brunch a couple of weekends ago.  They have a sous vide bath and have several dozen eggs poaching all the time.  The advantage of the strainer method is that it gets rid of the excess whites that can look stringy.  When I poach them in my Sous Vide supreme at home, I just trim off the loose egg white.  Perfect poaching every time and can do a bunch at the same time.
