TRexed Prime Delmonico Steaks (pics)
I set them on the counter until they came up to room temp:
Right before I put them on the LBGE, I brushed them with canola oil and then seasoned them with salt and pepper:
90 seconds on the first side:
90 seconds on the other:
Rest for 20 minutes:
Back on a ~400F cooker for 5 more minutes on each side:
