the ones i have say shoulder cut boneless. how long at 250 raised grill direct, or is there a better way.

Depends how thick those puppies are, but 2-3 hours is prolly about right. I did a ditty up on the dizzy site that shows how I do them, and I definitely like your plan of doing direct.
