7lbs Roast Beef

I am a new egg owner. I have a 7lbs roast need some suggestions.

I am in the "cook indirect at around 250-260*F on the calibrated dome thermo" til you reach your finish temp. Rub with kosher salt and fresh ground pepper then enjoy. Expect it to take around 2.5 hours +/- to 125*F internal. I use oak (Jack Daniels chips if I have them) for smoke.
There are other ways to go-and hopefully the reverse sear crowd will be along as that is a popular method as well.

First thing I'd do is divide the roast in half. I'd rather ruin a 4lb roast than a 7. Don't ask me how I know...Green egg, dead animal and alcohol. The "Boro".. TN
