I wanted to give a hearty thanks to everyone who made Eggfest such a good time for the wife and myself. Being a noob at the egg I have to ask a few questions. I've only cooked on gas grills before so please, how much charcoal/chips should I use? I'm planning on throwing some chicken on tomorrow for fajitas, how long should I let them go? Thanks again everyone! See you next year! (Except Sally and Wes, hopefully we'll see you much sooner!)

This is the subject I think we are universally united on. JUst don't ask how to cook a burger you'll get 9,000 replies! ;>)[p]Fill your egg to at least the bottom of the fire ring . . . at least! Many, like myself will add to the middle of the fire ring. You may want to take a look a what Elder Ward has to say about laying your fire. In the recipt section under Elder Wards North Carolina Pulled Pork, it's a great starting point and once there you can develop you own version. Welcome to the cult and this is the place to ask your questions.

As a "general" rule you always want to fill the lump to the top of the firebox. As far as adding smoking chips, I would suggest you don`t add any chips for your first cook so you can realize the somewhat smokey flavor of just the lump. I would assume you are cooking chicken breasts, if so I would cook at around 350° until the internal is around 160°. Give me a call at home this evening and I`ll try to help.[p]Wess

It would be my pleasure to cook with you at a fest, we have become hooked on Eggtoberfest and for sure will always be at Eggfest in Waldorf, if scheduling works better next year you may even see us in Texas....so it`s bound to happen somewhere down the road.
