Question about Salmon, but the breakfast kind.

I'm looking to smoke some salmon like we find at Whole Foods. I see recipes galore here, but I don't know if they're for the dinner variety of salmon or the breakfast kind, which is what I'm looking for. I'm not even sure there's a difference.
I'm not looking to make lox, just the kind of salmon that Whole Foods sells in the 1/2 pound, or so, size that we leave in the fridge and pick it for a few days at breakfast and put the chunks on bagels. It's sold skin-on. Thanks.
