Looking for a solid meatloaf recipe

I have some people coming over tomorrow night. Gonna make on the egg: mac & cheese, cornbread, kale greens, and roasted red potatoes. 

I bought 1.5 lbs of ground chuck and 1.5 lbs of ground pork. I want to make a meatloaf on the egg for the first time and am looking for a good recipe.

    I have used this recipe several times and been very happy with the results.
  • I learned to make my meatloaf from one of my Wife's Polish aunts.  The Poles use beef, pork and veal, also known as the Holy Trinity to the Italians for their meatballs.  You can add whatever ingredients you desire along with the basics of salt, pepper, and garlic.  I like to add Pine Nuts, finely diced celery and carrot as well.  Where I come from ketchup is never an option for meatloaf.

    Simple ingredients, amazing results!
  • I use Big T's recipe:

    The third version of such to be exact.  Smoked on the BGE in a loaf pan, this recipe is dang good.  Also Big T is a poster on this board

  • It doesn't count as an official BGE meatloaf unless you wrap it in bacon!

    Look at small mounds wrapped in bacon and rubbed with BBQ sauce / bigger than meatball size like muffin (spelling?) size. What ever cook w/o pan so all sides get the good crust.
    Salado TX Egg Family: 3 Large and a very well used Mini, added a Mini Max (I'm good for now). 

  • Mine's pretty simple, but my wife loves it.


    1 1/2 lb. Beef, ground     

    1/2 cup Cracker crumbs

    2 Eggs, beaten

    1 8 oz. can  Tomato sauce

    1/4 cup Onion , finely chopped

    2 tablespoons Bell pepper, chopped

    1 dash Thyme, dried, crushed

    1 dash Marjoram, dried, crushed

    1 teaspoon Salt

    --------- Topping -----------

    1/2  cup Ketchup

    1 tablespoon Sugar, brown, packed

    1 tablespoon Worcestershire sauce

    2 teaspoons Lemon juice

    1/2 teaspoon Horseradish, prepared


    1. Mix all ingredients.  Shape into loaf and bake at 350º for 1 1/4 hours.

    2. 15 or 20 minutes before meatloaf is done, apply topping and return to oven.

    Alton Brown has a really good recipe.  We don't add the carrots however.  He also has a nice glaze to go with it (part of the recipe).  Cooking it on the egg w/ smoke makes it amazing.

    tgeklman - I have all of AB's books and couldn't find this recipe in them. I must've overlooked it...

    Leave out the breadcrumbs, add more eggs to any meatloaf recipe and it will be more solid.
