So my butcher ran out of brisket this morning and i had to make due with a small flat from whole foods. anything special i should know with a small brisket like this?
Was thinking 250ish grate temp, indirect, hickory chips, 1 1/2 hours per pound til it's at the right temp.

I do mine the "Travis" way. Here's a recent pictorial on my last flat cook. http://eggheadforum.com/discussion/1146043/brisket-attempt-2#latest I think the part braise is best way to cook a flat. Good luck.Clarendon Hills, IL
