Gameday Ham

Getting ready for the SEC Championship in a few hours.  My neighbor has been on me for a few weeks to cook a ham that he had, so here it is.

First I put some Billy Bones on it.  This is the same rub I use on Butts.  I have had a lot of luck with it in competitions too.

Then I put Honey over it.  My wife's grandparents make this honey and sell it.

After rubbing it down and glazing it in honey, I put some more rub over the top.  The honey helps the rub stick.  It is in a pan of apple juice, and I use Apple wood for smoke.

I don't know why this one is upside down, but here it is finished.  The honey and rub make a real nice bark with a lot of flavor, and the apple juice along with being on the egg make it stay really nice and moist.
