Questions about injecting.
- Is it preferable to inject a turkey well before cooking, such as when you brine? Or right before the bird goes on the heat?

One way to look at injecting, is you're brining from the inside. If you don't wait, the flavor and salt aren't going to distribute into the tissue, much like a short brine time.
