smoke trout fillets

Brine trout fillets in the following for four hours.<?xml:namespace prefix = o ns = "urn:schemas-microsoft-com:office:office" />

1/4 Gallon of water
1/4 cup sugar
1/4 cup brown sugar
1/4 cup salt
1 Tablespoons garlic powder
1 Tablespoons chili powder
2 Tablespoons lemon juice


Dry off and lightly coat with EVOO.  I like garlic infused olive oil best.

Lightly add local honey.

Salt, pepper and smoked paprika.

Smoke on egg with pecan and cherry at 260.

I served with smoked wild rice and sautéed mushrooms and green beans.

    That looks great.  I loved smoked fish.  Have you tried doing these on a cedar plank?

    Cedar plank is my favorite but I burnt up the last one and didn't have any on hand.  This was really good but I personally think the blank makes it even better.  It's the only way I will eat salmon.  To me the trick for any good smoked fish is a bit of honey rub.

    To be honest Focker, I'm not the biggest fan of either trout or salmon.  The wife is thus we eat it a lot and I in turn get to buy egg toys.  However, I really do like smoked fish.  If you close one eye and face the wind you can just about convince yourself your eating a good piece of pork butt. :D
