Egging babybacks w/ silverskin

Watching Diners Drive-ins and Dives. Just saw a place in Kansas City that smokes their babybacks with the silverskin on. After pulling the ribs, he pulled the paperlike silverskin off. He claimed it kept the ribs more moist.
I'm just curious if anyone had ever tried this method and what their results were like.

I have never had trouble with ribs not being moist. I guess his theory is that the skin is holding the fat on the bottom in through the cook. It may be a good idea on certain pits that are more likely to dry meat out.Large BGE Decatur, AL
