Just a quick spatchcock

Not a lot of time for cooking today, so threw on a quick chicken.  Kept it simple with just, olive oil, salt, pepper and lemon herb seasoning.  375 raised direct with a couple of cherry wood chunks, for about an hour until breast was 160, thigh 175.  First time I've used cherry with chicken and really liked it.  Nice and mild with great flavor.  Sweet potato wedges were basted with Maple syrup (I capitalized the M for all you Canadians out there).  
It's not a science, it's an art. And it's flawed.
