Years ago I bought a boning knife from smart and final for 5.99, I think the brand is chefs choice. I've used it on the boat to filet sheepshead (a tough skinned fish) cut up wholle chickens, tri tip ect. It's high carbon steel, sharpens quick, and works just as good as our expensive wedding set knives. I even bought one for my friend who filets more fish that anyone I know and he loves it. I'm without a doubt sure that there's way more superior and costly knives out there, but not being a professional chef, I'm totally happy with my investment. Might want to grab one just to see what you think, I do have to sharpen it a lot but I love it

Probably a different species than your thinking of, do a search for California sheepshead, read a little about them, and if you still wanna feed them to your dog, your pets way more spoiled than mine. They're a fish that feeds primarily on shellfish and crustaceans, and as a result their meat is white flaky and had a subtle lobster taste

The sheepshead we catch down in Louisiana are absolutely delicious! I was with a couple of friends a few years back and we caught 80 of them.

My dream chef knife is a real Kramer. Not the mass produced one, but the handmade one by the man himself. But they go for 8K plus.

I have been in the lottery to get on the waiting list for a Kramer for 2-3 years. I would drop the 4k for a 10" Damascus for sure. The problem is even if I get picked in the lottery its still a 2 year wait from there.
