Smoked Tuna Dip, Grits a Ya Ya, and Blackend Red Snapper. (6 pics)

TUNA DIP

Salt and pepper the tuna and cook with apple wood till 137 internal. No brine. 

I dont have any measurements for the other ingredients . I just threw stuff in there until it seemed right. 

GRITS A YA YA

This was amazing. I used polenta instead of grits. I liked it. 
The only things I would do differently are use bigger shrimp and thicken the sauce more.

BLACKEND RED SNAPPER

Easy. Just melt a bunch of butter and dunk all the fish in it. Then coat in favorite seasoning. I used a cast iron skillet on med high heat.
