TUNA DIP
I dont have any measurements for the other ingredients . I just threw stuff in there until it seemed right.
GRITS A YA YA
This was amazing. I used polenta instead of grits. I liked it.
The only things I would do differently are use bigger shrimp and thicken the sauce more.

BLACKEND RED SNAPPER
Easy. Just melt a bunch of butter and dunk all the fish in it. Then coat in favorite seasoning. I used a cast iron skillet on med high heat.

I LOVE blackened red fish, but Texas doesn't allow selling wild red fish. My absolute favorite other fish is red snapper. Problem with red snapper is that the cost has skyrocketed to, like, $21.99/pound. Gary, I highly suggest the Grits a Ya Ya. I've eaten them several times at The Fish House in Pensacola, FL. They are just as good at home.It needs the biggest shrimp you can get and thick sauce.I had 6 people over for dinner and they all were freaking out about it.Be careful, man! I've got a beverage here.
