We had these as kids.  Called them Pig in a Poke.  A potato, cored with a sausage link stuffed inside, then baked.  Never used a drill, but used an apple corer to cut the hole.  Haven't had them in 40 years.  Now I'm going to have to try them on the grill.  It's been a long time, but I remember them as being delicious.

Tj, they actually sounds pretty tasty.  I am thinking if you nuke the tatters after the hole is drilled and then stuff  with the pork and cheese then wrap with bacon, prosciutto or jamon Iberico  they might be pretty tasty.
