We decided to crank it up to 1,000 degrees and cooked the pizza for about 90 seconds. I've been keeping a starter that I feed weekly from my A-16 dough recipe. I'm traveling to San Francisco in a few weeks to try the real deal. But today we made a pie with pesto, pepperoni, meatballs and buffalo mozz. It was fabulous and we got some great charred bubbles!!
