I bought these Kuhn Rikon shears earlier this year and they are superior. No problem at all with a chicken spine. http://www.amazon.com/Kuhn-Rikon-2710-Ultimate-Shears/dp/B001EN4CSI/ref=sr_1_17?ie=UTF8&qid=1346348568&sr=8-17&keywords=kitchen+shears
I would say these are a cut above the standard poultry shears. But now I have relagated the old ones to coarse, non-food jobs. I look like a pro cutting through a chicken spine effortlessly. I have a large super sharp Global chef's knife but would not think of using that over the shears. -
I use an extremely sharp CutCo hunting knife.XL BGE - Large BGE - Small BGE - Traeger Lil' Tex Elite - Weber Smokey Joe

Wusthof cleaver. For dramatic effect. Admittedly this method takes a bit of practice.
