Just the basic kitchen shears. I would say these are a cut above the standard poultry shears. But now I have relagated the old ones to coarse, non-food jobs. I look like a pro cutting through a chicken spine effortlessly. I have a large super sharp Global chef's knife but would not think of using that over the shears. -

Wusthof cleaver. For dramatic effect. Admittedly this method takes a bit of practice.
