Stuffed Pork Loin Chops

Howdy,

Had some pork loin chops in the freezer, wanted to eat 'em, but didn't feel like just doin regular pork chops... 

Soooooo, decided to STUFF 'EM!! 

Anyway, also didn't feel like pounding 'em out, and luckily for me they were pretty thick so they easily lended themselves to the lazy man's way of preparing them for stuffing - just cut a little "pocket" in the edge!!

So the stuffing was provolone cheese, spinach & mushrooms sauteed together in a mixture of garlic & butter (mmmmm) ;-)   - held together by 3 well-placed toothpicks for each chop...

METHOD:  Indirect
EGG: 400 Dome
MEAT:  145
RUB:  Dizzy Pig Dizzy Dust, Rub w/ Love Smoky BBQ Rub, KC Butt Spice
STUFFING:  Provolone Cheese, Garlic Butter Sauteed Spinach & Mushrooms
SMOKE:  4 chunks Pecan

Anyway, sorry, no pics of the preparation, but here's a pic of the finished product... The results were VERY good!!
