Wild Boar Bacon
Got some wild boar belly from my butcher, I cured for seven days (sweet cure - maple syrup etc...), smoked to 155 with apple and cherry wood. Then smoked the slices with dinner. My kids ate it all. Very nice, leaner than typical bacon and a different taste - a winner in my book.

nice looking stuff. my buddy made some wild boar prosciutto and finally sliced it up the other day. he did every thing wrong you could do curing it.
