Wild Boar Bacon

Got some wild boar belly from my butcher, I cured for seven days (sweet cure - maple syrup etc...), smoked to 155 with apple and cherry wood.  Then smoked the slices with dinner.  My kids ate it all.  Very nice, leaner than typical bacon and a different taste - a winner in my book.
