Suggestions on how to prepare pork butt night before smoke?

Going to smoke a pork butt looking for some good recipes. And should it set in the seasoning overnight?

    I prep mine the day before but cook's choice.  I use mustard as a binder (another option) then cover with rub of choice, drop in a large zip loc container and leave in fridge til ready to toss on the BGE.  Try the search function here or google with  big green egg in the header and you will find more info than you could ever need.  And here's a great link-

    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    Tons of recipes here and other places online. I personally like Steven Raichlen's BBQ rub with a few things added depending what I feel like. A lot of people on here also like the Dizzy Pig rubs. As for overnight, it's a matter of preference. I have done rubbed and let set overnight or rubbed while the fire was heating up. Didn't really make a noticeable difference in bark or taste.     Rob of choice the night before, wrap in plastic and put in fridge. I like Dizzy Dust or Bad Byrons Butt Rubb.

    Personally, I liked Rick Stuart's video on YouTube. It was so clear to me when I started on a BGE a few months ago that I seeked out (is that a proper phrase?) the exact ingredients. I live in a rural area and Bad Byron's Butt Rub is hard to find. Anyhow, the recipe is simple and it just works and I've now repeated it to the letter several times. I don't do so well with written instructions. YouTube was invented for me. So were GPS's.

  • We use Butcher's BBQ injection the day before.  We apply rub (I like Smokin Guns HOT) less than 30 minutes before it goes on the Egg (no mustard here).  We finish with a sweet sauce and serve.
