Mango Madness and Rocket Ribs

Well it is mango season so:



A Mango Grove:

Mango Relish and goat cheese crackers:

Were going to have mango daiquiris but not enough ripe mangoes so went for pomegranate martinis:

Then some Rocket Ribs:



Called them rocket ribs 'cause it only took 90 minutes at 375F
indirect, notice they were full slabs ripped down the middle. Helps the
cooking time and they are just as great as 225-250F for 5-6 hours IMHO.
I have also done them being ripped into thirds and cooked 375F they
only take 45-50 minutes.:

Had to have a little spatchcock to go with the meal:

Were going to have fresh mango ice cream but again not enough ripe
mangos, so settled on peaches drizzled in Gran Marnier with DP Pineapple
head and vanilla ice cream. They sat in BGE as it was cooling down for
30 minutes temp around 200F.

Had the usual sides, baked beans tomato salad, deviled eggs and
coleslaw, but the martinis made me forget where the camera was.
