    I'm sorry I didn't have time to post in time for your dinner.  Baked cheese grits has been a holiday staple in our home since I was a kid.  Prior to those shows listed above were the Andy Griffith show and Bonanza, both seen before they were reruns in my youth...so I'm up there with you.

    1 1/2 Cups dry 5 minute grits.  Bring to a boil in 6 Cups of water.  Cook until done (thick like oatmeal).  Reduce to MED heat.  Beat 3 eggs and spoon hot grits into eggs, then mix that into grits and let cook 3 to 4 minutes.  Add 1 pound of longhorn cheese (cheddar), chunked or grated.  Add 1 1/2 sticks of margarine and stir until melted.  Add 3 tsp of Lawrys Seasoning Salt.  Add a dash of Tabasco Sauce.  Add dash of Paprika.  Add 1 tsp of sea salt.  Grease large 9x13 baking dish and spoon in mixture.  Bake 1 hour @ 250 degrees.  This will yield a dish that is great as a side for breakfast lunch or dinner, and would make a great base for jalapeno grits.  Too bad I'm on weight watchers!

     

    Just far enough north of DFW to be "rural"...and close enough to be urban, depending on my mood.

    Sorry guys for being late to the table. Pun intended... What does the beaten eggs add to the mixture give you? Does anyone have any pics of the finished product?
