My first brisket on my egg
Just put on my first brisket on my XLBGE 14.30 before I trimmed it. I think its at 13 lbs now. Went on at 10:pm my time. Cooking 2 butts Thursday 8 lbs each. Happy 4th everyone My Nephew's on leave HOORAH!!!

Well I just pulled the brisket off! 12:15 my time 14.25 hours. Foiled and toweled. I did a little taste. MMMMMmmmmm HAPPY 4th! @ Betty I thank all that have, are or going to serve!! <:-P

Ditto that- so great that you are able to see him while he is on leave!Why do you think brisket sometimes comes out dry? I did my first one about a month ago- had it on from 10:30 PM till 3 PM before it came up to temp (we had a bit of a low fire from 3-6AM)! It was a flat which is what I decided was the problem (delicious but DRY- still I served it to 8 people with some bottled bbq sauce (had to improvise fast) and there was not a crumb left). Looks like you used a packer- could you tell which spots were dry? Would you do anything differently next time? I am going to make another one (I found someone who sells packers near us) next weekend.Enjoy your nephew!!Johns Is, SC
