    If buying pork butts from Costco they are boneless and need to be tied to cook them evenly.

    OP it looks good, what is the total weight of the 4?  How many folks are you planning on feeding?

    Not sure of the total weight, I never really looked.  Two packages of Costco butts ( two per package ).  We have about 60 people to feed and about 1/3 of those are kids.

    What kind of sauce are you planning on serving?  We really like this one from Dr BBQ:

     

    Dr. BBQ’s Carolina Barbecue Sauce


    From The NFL Gameday Cookbook” by Ray “Dr. BBQ” Lampe and published by Chronicle Books
    1 c vinegar
    2/3 C catsup
    2 t sugar
    1 t salt
    1 t Worcestershire
    ½     t red pepper flakes
    In a small saucepan mix together the vinegar, catsup, sugar, salt, Worcestershire and pepper
    flakes. Cook over low heat for 5 minutes stirring to blend.
    Makes about two cups
