Today I had alligator. My buddy killed about a week ago. Was awesome. Ever had?

    We have eggers who make gator sausage from ones they  kill.  Gator tail sauted in a cast iron pan is great.
    Alligator, Ribs
     
     
    INGREDIENTS:  
    2 lbs    Florida alligator ribs  
    1/4 cup    cider vinegar  
    1/3 cup    lemon juice  
     
    2 Tbs    vegetable oil  
    1 tsp    season salt  
    1/2 tsp    season black pepper  
     
    Procedure:
    1 Place ribs in a shallow glass dish or large resealable
    plastic food storage bag.
    2 Pour vinegar over ribs; toss to thoroughly coat all pieces
    well.
    3 Cover dish or close bag; marinate in vinegar for 15 minutes
    in the refrigerator.
    4 Combine juice, oil, salt, and pepper until well
    blended.
    5 Reserve 1/8 cup marinade for basting.
    6 Add remaining marinade to ribs.
    7 Turn and coat well.
    8 Marinate in the refrigerator for 45 minutes.
    9 Remove ribs from marinade; discard marinade.
    10 Grill over medium coals about 45 minutes or until ribs are
    tender, basting frequently with 1/8 cup
    marinade.

    Alligator, Blackened Gator
     
     
    INGREDIENTS:  

      Farm raised gator  
     

      Butter or Italian dressing  

      Blackened Seasoning mix  
     
    Procedure:
    1 Cut gator crosswise in half.( You want a fillet about ½ inch
    thick). Dip fillet in butter or dressing to coat. Then sprinkle both sides
    evenly with mix. Cook on white hot skillet until done, approx. 2-3 mins each
    side until crispy. Serve with lemon or butter if
    desired.
