Hanging a lamb leg, or anything for that matter.

So I'm fairly new to the BGE world and loving it. Recently I've been playing a little bit with hanging things from the chimney. I truss up the meat leaving a long strand of butcher twine, pre-heat the egg, pull off the daisy, run some butcher twine up out the chimney, and with the help of a lovely assistant tie off the meat so it is suspended and not touching the sides of the egg.  When its time to open, just go slow and use something to keep it off the sides..

I started with some lamb shanks, and they worked great. So I figured I could spend the extra $ and graduate to a whole bone-in leg. It was awesome. 

I have a mustard rub I make, apply plenty along with some fresh rosemary. Let that hang out for a few hours, tie, hang, smoke. Came out great.

Planning on doing a goat leg this week. Ideas? Anyone else doing this?

    Haven't heard of that before, great idea though. I would imagine it almost works like a tandoor. Where are you able to find goat leg at? I would love to try one

    I have used this Chinese Duck hook a few times over the years.  I found it in an Oriental restaurant supply store in Orlando, Fl. several years ago,  The short hook is 4" and the 2 long ones are 8".  Fun to play with.

    A guy going by the name SurfinSapo on The Texas BBQ Forum had some type of device (not sure what its called or where he got it) that he uses to hang meat from and cooks on his kamado grill. On this thread he was doing cabrito. Maybe tjv can come up with something if there is enough interest, although I doubt there will be.

  • Thanks for the pics / insight. I'll ad a couple photos of my own for conversations sake, and be on the lookout for other hanging options.

    For the goat leg, I have a farmer in in Colorado I use for a few different things, my wife calls it "ordering a hit" as he doesn't slaughter until I call and can go pick it up. 

    Goat makes for nice BBQ, but it needs a little extra fat. My grandfather introduced me as a kid, he liked its extra "Zip"

    I've never considered doing this, but I have to admit the idea sounds pretty awesome.  Thanks for putting an unusual technique out there, I could actually see trying this in the future.
