grilled tuna steaks

juice from 4 lemons
1/2 cup soy sauce
1 cup red wine vinegar
1/2 cup olive oil
2 small chopped onions
4 cloves minced garlic
1 tbls jamaican firewalk
1 tbls cumin
1 tsp pepper
1.5 tbls penzeys pickling spice
4 stewed tomatoes chopped
juice from 28 oz can of stewed tomatoes
1/2 cup turbinado sugar
1 cup ginger ale and a squirt of prepared ginger
1 cup frozen maine blueberries[p]simmered all ingediants except berries. chilled in freezer and added berries and ice cubes to help it chill, marinated for 2 hours. reheated sauce to ladle onto steaks after they were seared

i think with a few modifications it would make a great steak sauce. maybe 1/4 cup soy and 1/4 cup worcestershire sauce and maybe no blueberries. still have lots of bluberries from last season to get rid of

Now, can I cook salmon to only 120? I've been cooking it to 140 due to fear of getting sick, just wondering if you know.

ive only cooked salmon til it starts to flake, never measured temp. that tuna (bluefin)looked like a sushi grade and probably could have served it raw. i like it a light pink inside, 110 to 115 would have been better, as it was overcooking in the plate, serve immediatly from the grill and dont let it rest

many keg changes this year, but only once have i been without a backup keg. : ) will be adding a second tap for some smuttynose beers soon. have to check and see if they take the same setup as sam adams. you are right though, the pictures always look better with a pint
