Egg plant suggestions

I have to go to a dinner party, very informal, and we were bringing lasagna. That part is covered. Just found out that there will be a few college age boys there for dinner, so we gotta make things go a little further now. I was thinking some sort of roasted egg plant,onion,tomatoe, etc... thing, but want some advise from those of you that have had more experience than me with egg plant. I have had very little experience. Any suggestions would be very much appreciated. I will be limited to using a stovetop and or oven, no grill available. Thanks in advance.

    Crab leg,[p]Here is one that I got off the Le Creuset web site and we have ended up loving. I modify it by adding chopped onion to the saute, and putting a mix of soft butter, bread crumbs and parmisian cheese on the top for the last 15 minutes. [p]But maybe Max it right...perhaps throwing them raw hamburger meat would be a better choice. LOL!

    Crab leg,
    try precooking eggplant on BGE, make a casserole, use onions tomatoes, sweet pepper, a little fresh basil,shrimp, and top with parmesan and bread crumbs, all you do is bake at your destination.

    That parmisian cheese is hard to find. Try parmesan instead ............

    Crab leg,
    I've peeled them, sliced real thick, like 1". Then cut the slices to try to make 1" cubes. Dip in some eggmix and add bread crumbs with raging river. Now normaly I fry these in some butter and EVOO, then salt them when they are done. They turn out to be a nice crunchy treat, college kids would eat these...they'll eat anything fried.
    BUT i wonder if you bread them and roast them on a raised grid direct at 300 dome temp for a while....similar to the crunchy non fried chicken wings on the Dizzy Pig site, how would that come out? I may try this.
