Stuffed turkey breast

Hello fellow egg heads.  I've been here for a little over 3 months and I'm enjoying the great recipes, tips and techniques on taming the beast.
I've decided to share with everyone my stuffed turkey breast.  Complete with pics because if you don't have pics, it never happened :P

I started with a 2.2 lbs turkey breast, skin on and bone it :D
I used a sharp knife and cut a pocket at the top of the breast by the neck area.  I cut it very close to the rib cage and as deep a possible without cutting through the breast itself.  Next I used your basic stove top stuffing.  Cooked as per directions and I stuffed the mofo.  I used tooth picks to secure the skin tight to the breast to keep the juices inside.  I then season the breast with salt and pepper.  Don't skimp on the salt.  No oil either.

I cooked the breast direct at 375 for 55mins to the internal temp of 155 and pull it so it could rest.  I also added a handful of apple wood chips.

Turkey turned out juicy and delish!  I only have one complaint, I can't get chicken or turkey skin crispy, it always turns out rubbery :(   Help please.
