First try @ searing steaks
Picked up a couple of New Yorks and wanted to give the T-Rex system a try. This was 90 seconds per side @ 650 degrees. ">
Rested 20 minutes and finished off @ 400 indirect until rare.

Budgeezer they look great. I am a big fan of the TRex system.1. I put the steaks on a 250 indirect grill with a temp probe in. When the internal temp gets to about 110-115 I pull them and switch to direct heat.2. Tent the steaks while the fire comes up to temp of 650-700.3. Sear each side for 90 seconds or so, depending on desired temp (rare, med rare, etc)Try it some time.

Not really a special occasion just starting off the long holiday weekend. The Caymus was awesome.
Bud is a can is pretty much the house beverage.

I dry them, and bring them to room temperature. Sprinkle with salt/pepper/Montreal.
650 one side for two minutes, flip, 650 the other side for two minutes, flip, place a pat of butter on top and shut down the grill. Leave on for about three minutes for a perfect medium rare.
Best steak I've ever eaten.
