Don't have to many details, my wife`s Aunt did the whole enchilada:
15lb Pork shoulder
5 lb Pork ribs
Achiote, and a lot of other spices
All wrapped up in Banana leaves, for security i wrapped in heavy duty aluminum.
Started a few minutes ago at 220-225 with DigiQ, lets see how long it takes??????

There is so much rub in this thing, that the banana leaves are not going to hold up, burn and the whole wet rub is going to fall through the grill. Cochinita pibil is not smoked, so i did not add any type of wood flavor. It is a test, because i have had it many times on the oven, so let see whats the difference if any!FelipeMen, easier fed than understood!!

FlyingTivo, The pibil should taste moister on the egg. I have translated several "oven" dishes to the egg and IMHO they turn out moister and better tasting on the egg. (dry heat vs moist heat?)Traditionally this is cooked in in holes dug in the ground surrounded by very hot rocks, banana leaves and covered by dirt.I know your aunt prepared this but where did she get the naranja agria or does she have a good substitute for the flavor this orange adds.Large, small and mini now Egging in Rowlett Tx

Austin:We have plenty of Sour Orange to go around, its like basil for the rest of you guys, everybody has a small tree either on their garden or in their ranch.La Cochinita is at 197 after 12hrs@240, I'm about to pack it up. OK guys, pulled the bones out and ready for serving!Tweev: Im glad i used the aluminum pan, as you can see in the pictures all the juices would have been lost.It was the most tender fall of the bone shoulder and ribs ever made! I think its going to be a repeat.Sorry for the stray Viking`s fan in Mexico!FelipeMen, easier fed than understood!!

That does look fantastic!! I've never heard of it. I want to know more. I'm going to ask a few of my hispanic co-workers for info. As for doing it on the egg, could you do the wet rub on the inside, and then smoke it on the egg? Like corn on the cob style?Is it done yet? Is it done yet?
