So, ribs rubbed with CYM and Stubb's Rub. Cooked at 225 degrees using 3-1-1 method, but the last hour actually went 15 min longer at 325 deg with Sweet Baby Rays sauce.

VI,the texture was perfect - just before "fall off the bone". The rub was lacking, but my wife loved it. Just not enough pepper or bite for me.GEAUX TIGERS!!!!!!!!!

Here is mine. I did 3-2-1.
Yellow mustard and Dizzy Dust and finished up with blues hog sauce.

Or the last hour on the grill just to dry them back out. If you are eating them dry, then just put them back on the BGE for an hour with nothing on them.
3 hours on grill
1 hour wrapped in foil on grill
1 hour on grill with sauce or glaze
