Pulled pork leftovers

 Just watched an episode of Diners Drive-Ins, and Dives.  There's a place called The Red Wagon in Vancouver that serves pulled pork buttermilk pancakes with Jack Daniels maple syrup.  The pork is stacked between the pancakes and coated with the syrup. I'm planning on egging a Boston Butt this weekend. Think I know what I'll do with some of the leftovers.
