Simple Pulled Pork Question

This fall, I'll be taking pulled pork to college football tailgates.  We will leave the house in the morning, but not get there and eat until the afternoon.  Should I pull the pork before I go, or leave it together and pull it there at the tailgate?  My inclination is to just leave it in a foiled ice chest and pull it there, but you guys are the experts.

While I'm at it, same question, but for cutting brisket?

In both cases if you can, pull or slice as needed. They seem to dry out pretty quick.
