Freezing Brisket
Yesterday, I was in Costco and happened to see a really nice looking 8lb flat, and bought it hoping to try smoking brisket again. Today I woke up too sick to get out of bed. Figuring there's no way I'll be smoking a brisket in the next few days, I moved it from the fridge to the freezer. I assume when I'm ready to use it, I can just move it to the fridge a couple of days in advance...and it should be good as new?

should be fine. I have done it before.

I have done it with pork butts and it worked fine. Have one to cook tonight that I bought 2 weeks ago on sale for some guests coming tomorrow. Not sure if beef reacts differently to being frozen but the butts have been fine in the past when frozen/thawed.

I put the flat I purchased in the freezer too. Thawed it out in some water in the sink for a bit, before putting it in the fridge before cooking. Worked fine!

I moved this brisket from the freezer back to the fridge Wednesday night. Now (Friday night) it seems to be defrosted. I'm planning to cook it sometime this weekend.
