But Up or Down?

Doing my first all niter with a 9 lb. butt.  I've cooked many of these before but this is my first on the egg. I've always done fat side up before but what about in the Egg?

    I do mine with the fat side down. I am sure other people will say fat side up. It is each persons personal opinion.

    I also do mine fat cap down.  I'm not sure if it makes any difference.

    No difference with the cook but of late I go fat side down so that should anything stick to the grate it's the fat cap.  Personal preference for sure, especially if you really trim it up (which I don't do).
    Louisville; Rolling smoke in the neighbourhood.  Life is too short for light/lite beer!  Seems I'm livin in a transitional period. CHEETO (aka Agent Orange) makes Nixon look like a saint.

    I trim the fat off to allow for more bark. Just finished eating one for dinner. Fantastic as usual.

    Agreed 100%.  Trim that nasty stuff off for more bark.  It does nothing to moisten the pork as some believe.  It just melts away into the drip pan and prevents bark from forming.
