Anybody do this? Pointers/advice if so?

    Sometimes. I just throw a plate setter in and let her rip. about 250 for 3-4 hrs. It doesn't turn out mush diff from my 45 min 400 raised direct method. As long as to take the bird off at 165 breast temp, it should be perfect.

    When I do mind direct at 400 it usually takes about an hour and a half for me. That's using a standard egg set up.
