One more - how much wood do I use?

I have 2 five pound butts on. Built fire a la Elder Ward. His link said to put a fist size piece of smoking wood on the fist sized fire after lighting the lump. Is that all? I did bury one for good measure but the first piece has already stopped smoking.
Born and raised in NOLA. Now live in East TN.

Most of my chunks are smaller than a man's fist. I'll put one in the center just before the meat goes on, but I'll have several more away from the center so that as the fire spreads it can find chunks and keep the smoke up.
