Smoked Steelhead and St. Louis Spares

Two racks of St. Louis spares on the grate, v-rack hovering over the ribs, cedar planks supporting the steelhead and potatoes underneath. Everything turned out great, except the potatoes. I think I will keep using the microwave to "bake" potatoes. The potato skin and a quarter inch in was really tough and rubbery. Once the ribs were done, I removed the platesetter and opened the egg up to get a nice char on the outside over direct heat. So far the St. Louis spares are giving me much better results than baby backs.
