Tequila-Lime Flank Steak Fajitas

I marinated a flank steak with a tequila lime marinade (tequila, fresh lime juice, cilantro, garlic, evoo in a blender and poured over steak) for fajitas this evening....

    Tweev- I do find that the case with chicken, but haven't run into a problem with beef. I really don't let it sit long....30 minutes or so.

    Here's a Mojo marinade we did the other day on flank steak for 2 hours. It was really good.

    • 4 garlic cloves, minced
    • 1 jalapeno, minced
    • 1 large handful fresh cilantro leaves, finely chopped
    • Kosher salt and freshly ground black pepper
    • 2 limes, juiced
    • 1 orange, juiced
    • 2 tablespoons white vinegar
    • 1/2 cup olive oil

    In a mortar and pestle or bowl, mash together the garlic, jalapeno, cilantro, salt, and pepper to make a paste. Put the paste in a glass jar or plastic container. Add the lime juice, orange juice, vinegar, and oil. Shake it up really well to combine. Use as a marinade for chicken or beef or as a table condiment.

    Yield: approximately 1 1/4 cups

    Fajitas are easily one of my favorite things to make on the Egg because of the fantastic flavor and they are so bleeping easy!  Nice cook!

    How much flavor does the tequila add to the marinade?  I've used similar recipe w/o it and wonder how adding it would change the result.

    The tequila flavor is there, but it ends up being pretty subtle once cooked....no bite to it at all.

    To me, flank steak is exceptionally good for Oriental stir fry, because you slice it so thin. But, for fajitas, most people tend to slice them a bit thicker, and flank steak can become tough because there is very little fat content.  Skirt steak is the original preferred meat, but with the popularity of fajitas, skirt prices have skyrocketed.  Now, I use flap steak, which, in my opinion, is better than skirt, but isn't nearly as expensive.

    Just my dos pesos.

    Agree!  Adds a nice subtle flavor... It tenderizes the meat, too.
